A totopo is simply a corn tortilla, cut into triangles that are fried (or grilled, in some cases) until crispy. They are part of the Mexican aperitif, just like guacamole and hot sauces, and they also accompany certain specialties, such as "frijoles refritos" (mashed black or brown beans).
In reality, they fulfill a double function: decorative and practical, as they are also used as a spoon!
The great thing about totopos is that they can be enjoyed with many other specialties, such as hummus, tzatziki, or tarama, for example.
But totopos are also the base for preparing some iconic dishes like chilaquiles or the famous "nachos."
