The fruit of the cacao tree is the base for making chocolate, and its origins are in Mexico, in the state of Tabasco. Cacao is one of the ingredients Mexico has given to the world. The first civilization to domesticate and consume it was the Olmec civilization, followed by the Mayan and Aztec civilizations. Cacao was very important in pre-Hispanic times, as it was used to make (unsweetened) drinks, which were consumed during rituals and special festivities. The beans were also used as currency.
When the Spanish arrived in America, they tasted cacao for the first time. They began to import the beans to Europe and had the idea of mixing cacao paste with milk and sugar. This is how chocolate, as we know it today, was born.
"Casa Mayordomo" is one of the most important Mexican gastronomic institutions in the country, located in the state of Oaxaca. The company specializes in the preparation (grinding and production) of artisanal chocolate and mole.
To prepare hot chocolate with Mayordomo, simply dissolve it in very hot milk, or in water (as some communities in Mexico do).
