A totopo is simply a corn tortilla, cut into triangles and fried (or grilled, in some cases) until crispy. They are part of the Mexican aperitif, just like guacamole and hot sauces, and they also accompany some specialties, such as "frijoles refritos" (mashed black or brown beans).
In reality, they serve a double function: decorative and practical, as they are also used as a spoon!
The great thing about totopos is that they can be eaten with many other specialties, such as hummus, tzatziki, or taramasalata, for example.
But totopos are also the base for preparing emblematic dishes such as chilaquiles or the famous "nachos".
